Creamy Baked Mac and Cheese

So many different ways to make macaroni and cheese that I was not even going to post this one but I figured why not. I am picky with the cheeses that I use but that is up to you to decide of which cheese tastes you like best.

My favorite to use are a mix of american and mild cheddar cheeses.

Buy the blocks of cheese and cut into small cubes set aside.

Boil your pasta drain and set aside

Make a roux to thicken the cheese sauce. To do that take butter and melt on low heat in a sauce pan gradually add in some flour and whisk until it fully combines with the butter. Continue to add flour until it becomes thick enough to form into small balls. Remember to keep the heat really low so it will not burn.

Lets make our Cheese Sauce

In a sauce pan add a nice amount of butter and melt, add milk and bring to a simmer. Add in your cubed cheese and stir on a simmer until the cheese is fully melted and combines with the milk and butter which should be nice and creamy. Add one cube of roux which will thicken the sauce to your desired taste and season with salt and white pepper.

Time to Bake

In a baking dish add half a layer of pasta then pour in half of the cheese sauce, sprinkle on a nice amount of cheddar cheese, then add the rest of the pasta and pour on the rest of the cheese sauce so all the pasta is nice and coated, top with some more shredded cheese and bake until the top lightly browns. Enjoy!

Variations

Bacon – Adding some chopped crispy bacon is delicious!

Breadcrumbs – Sprinkle a nice amount of breadcrumbs on top before placing in the oven until golden brown!

Grated Parmesan cheese – sprinkle some grated parmesan cheese on top before and after baking!
